Description
Spaghetti alla Nerano. One of the signature dishes of Campania’s cuisine. Spaghetti alla Nerano is a dish that wins over every palate with its authentic simplicity. The origins of this traditional dish are shrouded in various legends; the most widespread and widely accepted theory traces the recipe back to the 1950s: it seems that a restaurant owner in the small bay of Nerano, in order to bind the pasta and courgettes together, tried adding Provolone del Monaco – a stretched-curd cheese that is more or less tangy depending on its maturation and typical of the Lattari Mountains. The secret to this dish’s deliciousness lies precisely in its incredible, mouth-watering creaminess and in the unrivalled flavour of this particular Provolone.
